Paula Dean's Banana Bread!

This bread is amazing! It is super moist and has a sweet thick banana taste =D The texture is fantastic and I would recommend it to anyone who loves bananas with a passion. It is a great recipe to try on a rainy day ;) It also puffs up nicely... makes a great loaf!

Paula Dean's Banana Bread!

Ingredients:

1/2 cup (1 stick) butter, at room temperature
1 cup sugar
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3 ripe bananas, mashed


Directions:

Preheat the oven to 350. Grease a 9×5 loaf pan. In a mixing bowl, combine the butter and sugar; mix well. Add the salt, eggs, vanilla, flour, baking soda, baking powder and bananas. Mix well. Pour the batter into the prepared pan and bake for 50 minutes.

( You can also use mini loaves)

NOTE: When cooking this bread keep an eye on it around the 40 min mark. You definitely won't want to burn this! Just do the normal insert a poker ( perfect cooking term :rolleyes: ) and pull out to see if it is clean.  Also make sure to wrap it in plastic wrap or aluminum foil after cooling to keep moisture in.

Servings: About 10

Prep Time: 15- 30 min.
Cook Time: 45-50 min
Total: 1h 20min

Ok, sorry it took so long to get back to this but I had to wait for my bananas to ripen! Awesome! A favorite recipe. Thank you so much. I made two batches, one including 1/3 cup chopped walnuts. Both came out amazing. :) thanks again
I love banana bread and I am trying to make one that tastes like one that I just love in a local cafe. I'll give your recipe a try as it sound great.

The recipe is very good. However, I seem to have a problem leaving any recipe alone.  I added 1/2 cup walnuts and 1 tsp of rum extract.
