Tomatoes, Peppers & Rice Recipe

This is another great recipe to make during tomato season because using fresh tomatoes is the best!


Tomatoes, Peppers & Rice Recipe

Ingredients:

2 - 3 med tomatoes, diced chunks
3 med - large green peppers (try mixing it up by adding a bit of red pepper), diced
1 red onion, diced
2 cloves of garlic, minced
2 -3 tbsp. oil or butter

1 cup rice
2 cups water
1 tsp. salt, optional
1 Tbsp. margarine, optional


Directions:

First start the rice.

I use Riceland Extra Long Grain Rice for this recipe with great results.

Combine in a 2-quart saucepan:
1 cup rice
2 cups water
1 tsp. salt, optional
1 Tbsp. margarine, optional

Stir lightly; bring to rolling boil & reduce heat to simmer (low boil).  Cover with a tight fitting lid and simmer for 15 minutes.

Remove from heat.  Let stand uncovered for 5 minutes.

While the rice is cooking, in large skillet saute chopped red onion, green pepper with butter and minced garlic.OPTIONAL: To spice things up a bit you could add hot pepper flakes now while the butter, garlic & vegetables are cooking.  Posted Image

Cover and cook over medium-high heat (stirring occasionally) until flavors are well blended & veggies are tender.  By now the rice should be done so you'll want to careful blend the two together and lastly add the fresh chopped tomatoes.  Gently stir the tomatoes into the rice mixture and serve with a smile! Salt to taste.
